3lbs apricots, not very ripe
1 lemon, juice
3lbs sugar
Lime water

Cooking Directions: 

- Remove the stones from the apricots and leave in the lime water for two hours.
- In a saucepan boil for 10 minutes the sugar with 2.5 cups of water and the half of the lemon juice.
- Leave to cool.
- Wash the apricots well to rinse of the lime water; brink them to the boil and wash well again.
- Place the apricots in the syrup and boil at low heat until the syrup thickens well.
