Ingredients: 

5 large artichokes
1 kilo (2 lbs 4 oz) carrots, scraped
1 kilo (2 lbs 4 oz) potatoes
1 teacup olive oil
2 spring onions, finely chopped
Dill, finely chopped
Some lettuce leaves
3 lemons
Salt
Pepper

Cooking Directions: 

- Clean and quarter the artichokes and drop them in a bowl of water containing the juice of one lemon and a lemon cup.
- In a pot, heat the oil and saute the onions and the dill lightly. 
- Add the artichokes stems, the potatoes (peeled and sliced, lengthwise), the carrots and the required amount of water. 
- When these veg-etables are half-cooked, add the arti¬chokes and simmer until all the water (except the oil) is gone. 
- Serve garnished with the lettuce leaves.
