10 large artichokes
Half teacup butter
1 medium-sized onion, finely diced
Half kilo (1 lb 2 oz) minced meat
The juice of one lemon
Parsley, finely chopped
2 tablespoons toasted breadcrumbs
2 eggs
Bechamel sauce
Half teacup grated cheese

- Clean the artichokes, by cutting their stalks and peel¬ing the tough outer leaves. Cut the tips of the remaining leaves off and remove the «hairy inside» in the middle of the heart with a teaspoon. 
- Rub the artichokes with a lemon cup, drop them in a pot and cover them with water. Add the juice of one lemon, season with salt and cook for about 20 minutes.
- Remove the artichokes from the pot, drain them and lay them in a buttered pan. Saute the onion lightly in a frying pan containing the butter. Add the minced meat, salt, pepper and the finely chopped parsley. Saute for a few minutes.
- Remove the frying pan from the fire. Add the breadcrumbs and the one egg, beaten, and stir well. Stuff the artichokes with the minced meat mixture.
- Prepare a batch of bechamel sauce and add to it the other egg (beaten) and the grated cheese.
- Cover each stuffed artichoke with the sauce and bake them for about 40 minutes in a medium fire. Serve hot.
