Aubergine in tomato and garlic sauce

Preparation Time: 

2 aubergines (eggplants)
2-3 onions, finely chopped
3 garlic cloves, sliced
5 ripe tomatoes, finely- chopped
2 teacups oil for frying
1 tablespoon sugar

Cooking Time: 
Cooking Directions: 

- Remove the stem ends of the aubergines (eggplants) and cut them into slices. 
- Place the slices in salted water for about 1 hour. Drain and fry them in plenty of oil. 
- Place them in a cooking pan and add the onions, the garlic, the tomatoes, the sugar, salt, pepper and some water and let them boil on medium heat for 20-25 minutes.
- Serve warm or cold with Feta cheese.
