Ingredients: 

1 kilo (2 lbs 4 oz) potatoes
2-3 courgettes, medium sized
2 aubergines, medium sized
4 medium sized tomatoes, chopped
2-3 green peppers
2 teacups olive oil
2-3 onions
1 teaspoon mint, finely chopped
Some parsley, chopped
Salt
Pepper 
 

Cooking Directions: 

- Wash the vegetables; remove the stem ends of the courgettes, the aubergines and the peppers and peel the potatoes and onions. 
- Then cut them into thick slices and place them in a baking or a pyrex dish. 
- Add the tomatoes, the parsley, the mint, the oil, salt and pepper and mix them well. 
- Add a little warm water and bake in a medi¬um oven for about 90 minutes. 
- Serve warm a first course with Feta cheese.
