Ingredients: 

1lb dried beans
3 tomatoes, mashed
1 onions, chopped
3 carrots, sliced
3 green peppers, sliced
3 celery sprigs, chopped
2/3 cup olive oil
1 hot pepper
Salt
Pepper

Cooking Directions: 

- Soak the beans, in bowl full of hot water, overnight.
- The next day, drain, place in saucepan with 3 cups of water and bring to the boil.
- Leave to cook for about half an hour and add the chopped onion, the celery, carrots, peppers (except the hot pepper), tomatoes, salt and pepper.
- Simmer for about one hour, until the beans are soft and 5 minutes before you get it off the heat add the hot pepper.
- Serve hot with Greek olives and Feta.
