7-8 artichokes 
2 lemons 
Half teacup olive oil
Salt
Pepper

Cooking Directions: 

- Peel the artichokes' outer tough leaves and cut their stalks.
- Slice them in the middle and remove the «hairy inside>> in the middle of the heart with a sharp knife.
- Rub each artichoke all over with half a lemon and drop it immediately into a bowl of water.
- In a pot, boil water containing the juice of one lemon, salt and two tablespoons olive oil.
- Drop the artichokes into the boiling water and cook for about 25-30 minutes.
- Drain the artichokes and serve them either with olive oil and lemon juice or with mayonnaise.
