2lbs sour orange peel
1 lemon, juice
2,5lbs sugar
2 cups water

Cooking Directions: 

- Select brightly colored oranges, wash and rub the peel lightly with a grater.
- Score the peel into four pieces and cut it off with a knife.
- Wash the pieces well, roll into cylinder shapes and fasten using a needle and thread, joining them together like beads on a necklace.
- Boil in plenty of water until soft.
- Remove in cold water and leave for 2 days, changing the water regularly.
- Drain the orange peel on a towel.
- Boil the water and the sugar for 10 minutes and add the orange peel.
- Boil for further 10 minutes and remove with a slotted spoon.
- Boil the syrup until thickens, add the orange peel and the lemon juice and leave to thick well.
