5  portions chicken
3-4 red peppers, cut in large pieces
250 grams (9 oz) black olives
2-3 ripe tomatoes, finely diced
1 glass red wine
2 onions, finely diced
1 ½ teacups olive oil
Pinch of thyme 

Cooking Time: 
Cooking Directions: 

- In a pot, heat the oil, add the chicken portions and brown for about 10 minutes.
- Add the onions, the peppers and the olives while stirring. Pour in the wine. 
- Next, add the tomatoes, the thyme, the salt and pepper and an amount of water. 
- Continue cooking over a medium fire for about an hour and a half. 
- Serve hot as a second course.
