5 portions chicken 
Half kilo (1 lb 2 02) long- grain rice
3-4 ripe tomatoes, finely diced
2 onions, finely diced
1 teacup olive oil

Cooking Time: 
Cooking Directions: 

- In a pot, saute the onions in the olive oil for about 5 min¬utes. 
- Add the chicken portions and let them turn golden brown. 
- Next, add the tomatoes and some water, salt and pepper and let everything cook for about an hour and a half. Add the rice. 
- Make sure that for every cup of rice there are two cups of broth in the pot (approximate¬ly). 
- Continue to cook for another 15 minutes. Serve hot as a second course.
