Ingredients: 

Half lb chick-peas
2 lemons
2 garlic cloves, crushed
Half cup olive oil
Salt
Pepper

Cooking Directions: 

- Soak the chick-peas in water over-night.
- Boil until soft and drain well.
- Leave to cool and when completely cold, blend to a paste.
- Place the paste in a bowl with the lemon juice, crushed garlic, oil, salt and pepper.
- Stir well and when the mixture turns creamy, serve.
- If it is very thick, add a little water.
