Ingredients: 

2lbs long eggplants
2lbs tomatoes, mashed
1onion, chopped
2 garlic cloves, chopped
7oz gruyere, cut into thin slices
2oz grated cheese
Half cup parsley, finely chopped
2 tablespoons fine bread crumbs
1 teaspoon sugar
Half cup olive oil
Salt
Pepper

Cooking Directions: 

- Wash the eggplants, cut into slices length-wise, sprinkle with salt and leave for one hour the bitter juices to run off.
- Wash and dry. Place in a buttered baking dish and bake for half an hour in the oven, turning on both sides.
- Heat the oil in a saucepan and sauté the onion, garlic and parsley for five minutes, stirring continuously.
- Add the mashed tomatoes, sugar, salt and pepper and simmer for half an hour.
- Spread the sauce over the eggplants in the baking dish, sprinkle with the bread crumbs and grated cheese and cover with the gruyere cheese cut into thin slices.
- Bake in the oven at 400oF for 30 minutes, until the cheese has been melted.
- Serve hot.
