Fried fish with a wine vinegar sauce

Preparation Time: 

1 kilo (2 lbs 4 oz) fish, e.g. saddled breams, (Oblada Melanura) etc.
Half teacup wine vinegar
Half teacup water
1 wine glass olive oil
A branch of rosemary
1 tablespoon flour
Black pepper

Cooking Time: 
Cooking Directions: 

- Prepare the fish accordingly, wash and season with salt. Flour the fish lightly and fry in oil in a frying pan, once the oil is quite hot. 
- Take the fish out, as soon as they become pale golden on both sides, and keep them aside.
Prepare the sauce as follows:

- Strain the contents of the frying pan, being careful not to include any burnt sediments, pour the strained oil in a saucepan and heat up. 
- Add the flour and stir with a wooden spatula in order to become a mixture on medium heat. 
- When this mix turns slightly brown, add the vinegar, the rosemary, and the water, season to taste and let it cook, until the sauce thickens up. 
- Finally, add the fried fish back into this sauce and simmer for about 5 minutes. 
- Serve hot.
