Ingredients: 

2lbs giant beans
2 Greek (Horiatika) sausages
3 medium sized onions, finely diced
1 clove garlic
4 ripe tomatoes
1 branch thyme
3 tablespoons finely chopped parsley
2 teacups olive oil
Salt 
Pepper

Cooking Directions: 

- Soak the giant beans in cold water overnight.
- The following day rinse the beans, drain through a colander and place them in a pot with water.
- Let them boil for about an hour.
- Strain the beans again and place them in a pan.
- In a pot, sauté the onions in the oil.
- Add the finely diced tomatoes, the garlic, the thyme, the parsley, the sausages cut in thick slices, some water, season with salt and pepper and let these cook for about 10 minutes
- Then put this sauce in the pan over the beans.
- Bake in a medium oven for about 35 minutes
