Ingredients: 

Half kilo (1 lb 2 oz) macaroni (No3)
3-4 ripe tomatoes, finely diced 
4-5 cloves garlic, finely diced
2 teacups Kefalotyri or Parmesan cheese, grated
2 teacups olive oil
2 teaspoons sugar
Salt
Pepper

Cooking Directions: 

- In a pot, pour one teacup oil and one teacup water, add the tomatoes, the garlic, salt and pepper and the sugar and boil for about 20 minutes.
- Boil the macaroni in plenty of salted water. Cool them down in cold water and drain.
- Heat the second teacup of oil in another pot, add the macaroni and saute them stirring all the time. 
- Pour the prepared sauce on top, sprinkle with grated cheese and serve this dish hot as a first course.
