6 long green peppers
Half lb soft cheese
3oz feta cheese
1 spring onion, finely chopped
2 tablespoons parsley, finely chopped
1 tablespoon butter
1 sprig of mint or basil
Olive oil

Cooking Directions: 

- Cut each pepper down the middle from the bottom.
- Wash them and remove the seeds.
- Mash thee butter, soft cheese and feta cheese with a fork, and add the salt and pepper
- Chop the parsley, mint and onion finely and add these to the cheese mixture, stirring well.
- Stuff the peppers with the mixture.
- Place the peppers in a baking dish, pour over the oil and bake at 400° F.
- Serve hot.
