2lbs intestines
1suet
2 lemons
4 tablespoons olive oil
Oregano
Salt
Pepper

Cooking Directions: 

- Rinse the intestines well with plenty of water.
- Take a long thin stick, place it in the end of one intestine and push slowly to turn the intestine inside out.
- Turn all the intestines in this way and wash them well, adding a little lemon juice to the final wash.
- Cut the suet into pieces 8-10 cm long and some intestines round each piece. 
- Place the rolls in a baking dish and sprinkle with salt and pepper, oregano and oil.
- Add 15 cups water.
- Bake the intestines rolls at 400°F for about 40 minutes until they have absorbed all the water and only the oil remains.
- Serve hot, covered in the juices produced during cooking.
