Ingredients: 
  • 4 oz (120 g) feta cheese, crumbled 
  • 1 tablespoon finely chopped fresh parsley
  • Half cup Red Pepper sauce 
  • 8 eggs, lightly beaten
  • 3-4 tablespoons clarified butter or olive oil
  • Salt
  • Pepper

10 minutes
Cooking Directions: 

- Stir the cheese, parsley, and red pepper sauce into the eggs. Melt the butter or heat the oil in a deep skillet or frying pan. 
- Pour in the egg mixture and cook over medium-low heat, stirring occasionally, for 5-10 minutes, until just set, or until cooked to your taste. 
- Transfer to a platter, season with salt and pepper, and serve immediately. As an alternative, replace the red pepper sauce with your own tomato sauce recipe with some chopped green bell pepper and a pinch of cayenne pepper or Tabasco for extra flavor.
