Ingredients: 

2lbs spinach
1 cup rice
4 spring onions
Half cup dill
1 cup tomato juice
1 cup olive oil
Lemon juice
Salt
Pepper

Cooking Directions: 

- Pick over, chop and wash the spinach.
- Boil plenty of water in a saucepan and add the spinach.
- Cook the spinach for 5 minutes and drain.
- Heat the oil in a saucepan; add the onions and the dill and sauté for a few minutes, until soft.
- Add the tomato juice, 2 cups of water, spinach and salt and pepper.
- Stir well and cook for 10 minutes.
- add the rice to the pan, stir and cook for 15 minutes.
- Remove the pan from the heat, cover with a towel and leave for about 10 minutes.
- Sprinkle with lemon and serve.
