Baked custard pie (Galaktompoureko)

20 sheets filo pastry
6 cups milk
1 cup fine semolina
6 eggs, beaten
1 cup butter
Lemon or orange peel
1.5 cups sugar
For the syrup
1 tablespoon lemon juice
2.5 cups sugar
1.5 cups water

- Boil the milk in a saucepan along with the sugar and the lemon or orange peel.
- Stirring continuously, add the semolina and brink to the boil.
- Remove the pan from the heat, take out the peel and add the beaten eggs.
- Place back on the heat, stirring vigorously and as soon as the mixture comes to the boil, remove it once more.
- Add half the butter and stir regularly to prevent a skin from forming.
- In a baking dish, place 8-10 sheets of filo pastry, brushing each one with butter.
- Pour the cream mixture over the pastry and fold the edges inwards.
- Cover with the remaining sheets of pastry, brushing each one with melted butter and the top sheets into square or triangle shapes using a sharp knife.
- Bake the custard pie at 180oC for about 45 minutes covering if necessary with a sheet of silver foil to prevent from burning .
Prepare the syrup
- In a saucepan boil the sugar and water for five minutes.
- Add the lemon juice remove from heat and leave to cool. 
- As soon as the custard pie is ready remove from oven and pour the cold syrup all over it.
- Leave to cool before serving.
