Ingredients: 

1 ½ kilos eels (3 lbs 6 oz)
1 kilo (2 lbs 4 oz) spinach
250 grams (9 oz) olive oil
Salt
Red pepper

Cooking Directions: 

- Cut the eels into slices. Wash the spinach very well and drain it. 
- Line a pan with spinach. Over the spinach make a layer of eel slices. 
- Make a spinach layer over the eel layer and then another eel layer. 
- Finally, on top, make a layer of spinach. 
- Add the oil, salt and pepper and little water and bake in the oven.
- Test with a fork to see if the food is done. Serve hot.
