Ingredients: 

3-4 kilos (6 lbs 12 oz 9 lbs) lamb
2 kilos (4 lbs 8 oz) spinach
1 kilo (2 lbs 4 oz) spring onions, chopped
6 teacups intestines and liver (both finely chopped)
4 teacups rice, washed
1 teacup butter
Mint
2 teacup olive oil
Salt
Red and black pepper

Cooking Directions: 

- Wash the lamb well, strain and season with salt and pepper. 
- Place it in a pan, pour melted butter over it and place the pan in pre-heated oven. 
- Wash the spinach meticulously and shred it in small pieces. Scald some oil in a pot and saute the onions in it. 
- Add the spinach, season with red pepper and saute. Put the sauteed spinach and onions into the pan with the lamb. 
- Add the intestines (cleaned and washed as described on p. 38) and liver (slightly boiled), the salt, the black pepper, the mint and a little bit of water. 
- Return the pan to the oven and continue baking. When the water in the pan starts boiling, add the rice. 
- Continue baking for 2 hours (approximately). Serve hot.
