4 long eggplants
1lb tomatoes, mashed
4 zucchini, sliced thickly
4 potatoes, sliced thickly
1 green pepper, cut into long pieces
1 red pepper, cut into long pieces
1 onion, chopped
4 garlic cloves, chopped
Half cup parsley, finely chopped
1 cup olive oil

Cooking Directions: 

- Wash the eggplants, cut into pieces, sprinkle with salt and pepper and leave for one hour for the bitter juices to drain off.
- Rinse, drain and fry in the oil.
- Remove from the pan and in the same oil fry the sliced potatoes and the zucchini.
- Place the fried vegetables in a saucepan and add the peppers, the onion, garlic cloves and the chopped parsley.
- Add the mashed tomatoes, salt and pepper and enough water to cover all vegetables.
- Cover the saucepan and simmer for about 45 minutes, until the vegetables are cooed and the sauce has thickened.
