Baked salted cod

2lbs slated cod
1lb tomatoes, mashed
2 large onions, sliced
2 garlic cloves, sliced
2 tablespoons parsley, finely chopped
Half cup white wine
Half cup olive oil

Cooking Time: 
1 hour
Cooking Directions: 

- Cut the cod into portions and soak in plenty of water for at least 10 hours in order to remove the salt. In meantime change the water 4 or 5 times.
- Heat the oil in a saucepan and sauté the onions and the garlic, stirring until soft.
- Add the mashed tomatoes, wine parsley, salt and pepper.
- Cover the pan and simmer for about half an hour.
- Place the pieces of cod in a baking dish and pour the prepared sauce over the top.
- Cover the dish with silver foil and bake in the oven at 400oF for about half an hour.
- You can bake potatoes with the fish if you wish, but remember to double the amount of tomatoes if you do so.
