120g (4oz) all-purpose (plain) flour
1 tablespoon olive oil
250 ml (8 fl oz) beer or Club soda (soda water)
2 egg whites

- Sift the flour with a pinch of salt and pepper into a bowl. Make a well in the center and pour in the oil and beer or club soda. 
- Gradually stir into the flour until a smooth, thin batter forms. Avoid over-mixing. 
- Add a little more flour, if a thicker batter is required. Let stand for about an hour. 
When ready to use, beat the egg whites until they form soft peaks, then gradually fold into the batter.
