Ingredients: 

1lb medium sized beans
2 medium carrots, scraped and sliced
2 cloves garlic
2 medium onions, finely chopped
2 ripe tomatoes, finely chopped
1 teacup olive oil
Salt
Pepper
 

Cooking Time: 
about 2 hours
Cooking Directions: 

- Soak the beans in water overnight to soften up.
- The following day rinse, drain and place them in a pot with water.
- Add the carrots, the onions, the garlic, the tomatoes, the olive oil, season to taste and let everything boil over a medium fire for about 2 hours.
- Serve warm.
