Ingredients: 

2 kilos (4 lbs 8 oz) beef
Olive oil
4 cloves garlic
1 1/2 teacups Kefalotyri or Parmesan cheese, grated
2 grated onions
2-3 bay leaves
Cinnamon, cloves, allspice
2 tablespoons tomato paste or 2 teacups tomato juice without seeds
50 grams (2 oz) spicy cheese
1 kilo (2 lbs 4 oz) thick macaroni
Butter
Salt
Pepper

Cooking Directions: 

- Wash and strain the beef and cut it into portions. Make deeps slits with a sharp knife at the meet pieces and insert the chopped garlic and pieces of the spicy cheese. 
- Tie each portion with string and season with salt and pepper. Heat the oil in a pot and saute the meat pieces, until they are golden. 
- Cover the sauteed meat with water.
- Add the tomato, the onions, the bay leaves and all the spice. Cover the pot and cook until the ingredients are left only in their own broth (which is thick and tasty). 
- In another pot boil the macaroni in plenty of salted water. When they are ready, drain them and scald them with butter. 
- Serve the macaroni onto dishes. Pour the beef broth over them and put one or two pieces of meat on each plate (the string should be removed from each piece before cooking). 
- Sprinkle with cinnamon and grated Kefalotyri or Parmesan cheese.
