3lbs pork shoulder-blade
2 garlic cloves
2 celery springs
1 bay leaf
- Place the meat in a saucepan with water to cover it.
- Bring to the boil and scoop off the foam with appears.
- Add the onions, garlic, the bay leaf, cloves, carrots, celery, pepper and salt and simmer for about 2 and a half hours, until the meat is tender.
- Remove the meat from the pan, leave to cool and cut into slides.
