2lbs bonito
4 garlic cloves
3 lemons 
1 teaspoon oregano
1 cup olive oil

Cooking Time: 
30 minutes
Cooking Directions: 

- Cut the heads off the bonito, remove the entrails and throw them away.
- Wash the fish well and make several cuts in the skin with a sharp knife on both sides.
- Cut the garlic into slices and push them into the cuts.
- Season with salt and pepper, brush well with oil and cook under the grill at 350oF or on a barbecue for one and a half hours.
- When ready, leave the fish to cool a little and remove the skin.
- Open it up and take out the bones running the middle. 
- In a bowl whisk the remaining oil with the lemon juice and oregano.
- Pour this over the fish and serve cold.
