2lb tomatoes, mashed
1 large onion
2 garlic cloves
Half cup parsley, finely chopped
1 bay leaf
1 cup olive oil
- Peel the potatoes, wash and cut into large pieces.
- Fry the onion and the garlic cloves in a saucepan until golden.
- Add the mashed tomatoes, the pieces of potatoes, the bay leaf, salt and pepper.
- Cover the pan and simmer for half an hour, without stirring so as not to break up the potatoes.
- Shake the pan gently instead so that the food does hot stick on the bottom.
