2lbs lemon peel
1 lemon, juice
3lbs sugar
2 cups water

Cooking Time: 
1 hour
Cooking Directions: 

- Select big lemons with thin skin, wash well and scrape lightly against a grater.
- Cut the peel off the lemons in pieces.
- Wash well and boil in plenty of water until soft.
- Remove and place in cold water.
- Change this water several times and then drain the pieces of lemon peel on a towel.
- Boil the water and the sugar for 10 minutes and then add the lemon peel.
- Boil for further 10 minutes and remove with a slotted spoon.
- Boil the syrup until thickens, add the lemon peel and the lemon juice and leave to thick well.
