1 medium-sized cauliflower
50 grams butter
2 kilo milk
1 egg yolk
2 tablespoons flour
150 grams ham, finely chopped

Cooking Time: 
20 minutes
Cooking Directions: 

- Cook the cauliflower in salted water. Cut it into small pieces and line a platter with it. Finely chop the ham and the parsley and spread them over the cauliflower.
- Melt the butter in a pot, add the flour and let it brown lightly.
- Gradually pour in the milk and season with salt and pepper stirring constantly with a wooden spoon, until you have a thick sauce.
- Remove the sauce from the fire; beat the egg yolk and slowly pour it into the pot.
- Dress the cauliflower with this sauce.
