3lbs cherries
1 lemon, juice
A little vanilla 
2,5lbs sugar
2 cups water

Cooking Directions: 

- Remove the cherry stalks and take out the stones using a special implement.
- Boil the sugar with the water for 10 minutes.
- Leave the syrup to cool and add the cherries.
- Boil for 5 minutes; remove the pan from the heat, cover and leave to stand for 24 hours.
- The next day, remove the cherries with a slotted spoon, add the vanilla and the lemon juice into the liquid and boil until it starts to thicken.
- Add the cherries and boil until thickens.
