Preparation Time: 

1lb chick peas
4 small onions
1 teaspoon baking soda
The juice of a lemon
1 cup olive oil

Cooking Time: 
2 and a half hours
Cooking Directions: 

- Soak the chick peas overnight in warm water.
- The following day drain the chick peas, add the baking soda, stir and rub them well.
- Rinse the chick peas carefully and place them in a pot with fresh water.
- Add the onions and bring the pot to the boil skimming with a slotted spoon, until the water is clear.
- Cover the pot and continue cooking for 2-2 and a half hours over a low fire.
- Finally, pour in the oil, season to taste and continue cooking until the chick peas are soft.
- Sprinkle the individual servings with lemon juice and serve.
