Chicken with leeks and sausages

5 portions chicken
250 grams (9 oz) carrots, coarsely choppcd
200 grams (7 oz) sausages, thickly sliced
1 teacup olive oil
1 ripe tomato, finely diced
1 glass red wine
3-4 leeks

Cooking Time: 
Cooking Directions: 

- Heat the oil in a pot over a medium fire. Add the chicken portions and the sausages and let them brown for about 10 minutes.
- Next, pour in the wine, add the tomatoes, salt, pepper and some water. 
- Allow everything to boil for about an hour. Finally, add the carrots and the leeks and continue cooking for another half an hour. 
- Serve hot as a second course.
