Ingredients: 

1lb sweet ricotta cheese
2 lbs flour
4 eggs
3 tablespoons olive oil
1 tablespoon vinegar
2 tablespoons finely chopped mint
Olive oil for frying
Salt
 

Cooking Directions: 

- In a large bowl, mix the flour with two of the eggs, a little salt, vinegar and as much water as necessary to make a pliable dough.
- Cover and leave in the refrigerator for 30 minutes.
- In a bowl, mash the cheese with a fork and add the remaining eggs and the mint.
- The mixture should be quite dry.
- Roll out the dough into 5 sheets on a floured surface.
- Using a glass or a pastry cutter, cut out circles of the pastry and place one spoonful of the mixture onto each one.
- Fold the pastry over to make a semicircle shape and press the edges to seal them.
- Heat plenty of oil in a frying pan and fry the pies on both sides.
- Remove when golden and serve hot.
