2-3 medium potatoes, diced
3 medium carrots, scraped and diced
3 medium courgettes, (zucchinis), diced
3 onions, finely chopped
2 leeks, sliced
3 tipe tomatoes, sliced
8oz bacon roughly cut
1.5 teacups olive oil
Some lemon juice
- Sauté the onions in the olive oil, until they become transparent.
- Add the vegetables, the bacon, and the beef stock and season to taste.
- Let these boil on medium heat for about an hour.
- Serve the soup warm with dashes of lemon.
