Ingredients: 

1 Cretan barley rusks
2 large, firm, ripe tomatoes, peeled, seeded, and diced
11 oz (300 g) Cretan sour mizithra or feta cheese, crumbled 
Pinch of dried oregano 
Salt
Pepper
Half cup (120 ml/4 fl oz) olive oil

Cooking Directions: 

- Moisten all surfaces of the rusks with water and put them on a small platter. Spoon the tomatoes and the cheese on top of the rusks, sprinkle with the oregano, and season with salt and pepper. 
- Drizzle the oil over the top. Alternatively, whisk the olive oil with 1 crushed garlic clove and 1 tablespoon balsamic vinegar. 
- You could also sprinkle sliced pitted (stoned) black olives on the rusks with the other ingredients.
