1kilo (1 lb 2 oz) rice
4 eggs
4-5 slices ham 
1 teacup grated cheese
3-4 tablespoons grated pine nuts
1 teacup toasted breadcrumbs 

Cooking Time: 
4-5 minutes
Cooking Directions: 

- Boil the rice for about 15 minutes in salted water stirring with a wooden spoon. Take off the heat, sprinkle with the grated cheese, mix and let it stand for 5 minutes. 
- Then, add the pine nuts, the ham (finely chopped), salt and pepper; stir well to make a mixture. In a bowl, beat the remaining 2 eggs. 
- Take spoonsfuls of the above mix and shape them as you like. Dip the croquettes into the beaten eggs, roll them in the breadcrumbs and fry them in hot oil, until they become golden brown. 
- Serve them either hot or cold.
