Duck with potatoes and chestnuts

Preparation Time: 

1 medium-sized duck
200 grams (7 oz) olive oil
2 spoonfuls butter
Half  kilo (1 lb 2 oz) chestnuts
100 grams (3 1/2 oz)   almonds, blanched
100 grams (3 1/2oz) white  raisins
1 kilo (2 lbs 4 oz) potatoes
1 lemon

- Clean and wash the duck. Drain it and season with salt and pepper. Boil the chestnuts and remove both their outer and inner coverings (shell and skin). 
- Break the almonds into big pieces and mix them with the raisins, the chestnuts, the butter, salt and pepper. Stuff the duck with this mixture. 
- Sew up both its openings and put it in a pan.
- Wash and peel the potatoes. If they are big slice them. 
- Add salt and pepper and arrange the potatoes around the duck. Pour the oil and the juice of the lemon over the duck and potatoes. 
- Bake in a medium oven. During baking time baste the duck and the potatoes from time to time. 
- When the food is done, remove the string that was used to sew up the bird. 
- Cut the duck into portions and serve it garnished with potatoes on one side and the stuffing on the other.
