Ingredients: 

3lbs flour
1 cup milk
1 teaspoon salt
5 tablespoons fresh yeast
2 tablespoons ground muhlep
2 tablespoons orange or lemon zest
7 eggs
1.5 cups butter 
1.5 cups sugar
 

Cooking Time: 
about 30 minutes
Cooking Directions: 

- Dissolve the yeast with a spoon of sugar and half a cup of lukewarm milk.
- Stir well and add 5 spoonfuls of flour, to make a mixture resembling batter.
- Sprinkle a spoonful of flour over the mixture, cover the bowl with a towel and place in a warm place to rise.
- When it has been raised, add the other ingredients in order, all at room temperature (not to cold).
- First mix in the butter with the sugar and stir well.
- Add the ground muhlep, salt. The rest of lukewarm milk, the orange or lemon zest and the eggs and mix together well.
- Add the flour and knead vigorously for about 15 minutes.
- Shape the dough into a ball, place in a bowl, cover with towel and place it in a warm place until it rises and doubles in size.
- When it has been raised, knead the dough well and shape into brioches, placing these in a buttered baking dish.
- Cover the dish with a towel and leave to rise again.
- When it’s ready brush lightly with the beaten yolk of the remaining egg and bake in a preheated oven at 350oF for half an hour.
