1 green pepper
2 spring onions
4 tablespoons parsley
1 cup mayonnaise
1 teaspoon mustard
- Cut the eggs into four and chop the parsley, spring onions and pepper finely.
- Place the mayonnaise in a bowl together with the mustard, salt, pepper and stir well.
- Add the rest of the ingredients and serve on a platter, garnished with slices of tomato.
