Ingredients: 

70 very small eggplants
1 lemon, juice
Shelled almonds
1 piece cinnamon
4-5 cloves
3lbs sugar
3 cups water

Cooking Directions: 

- Remove the stems from the eggplants, score each one length-wise down the middle and boil in the water with the lemon juice for about 15 minutes.
- Drain, place into cold water and leave for three hour, changing the water several times.
- Drain and lay out on a towel. Place an almond into each eggplant.
- Boil the water, sugar, cinnamon and the cloves and as soon as this syrup has started to thicken, add the eggplants.
- Boil for 10 minutes and remove the pan from the heat.
- When cold, remove the eggplants with a slotted spoon, discard the cinnamon and the cloves and boil the syrup until it has been thickened.
- Add the eggplants and leave to boil for a little.
