Fried eggs with aubergines

4 medium-sized aubergines (eggplants)
2 teaspoons parsley, finely chopped
2 onions, finely diced
2 fresh, ripe tomatoes, finely diced
600 grams (1 lb 5 oz) refined oil
2 spoonfuls sugar

Cooking Time: 
20-30 minutes
Cooking Directions: 

- Cut the aubergines (eggplants) in two, lengthwise. With a sharp knife cut square shapes in the aubergine pulps. 
- Fry the aubergine halves over a medium fire for 10 minutes and then place them in a pan. With a spoon scoop about half of the pulp out from each one. 
- Place the pulp along with some oil in a frying pan. Add the tomatoes, the onions, the parsley, the sugar, salt and pepper and cook for about 10 minutes. 
- Fill each aubergine with this mixture. Be careful not to over-fill them as there should be left enough room for the eggs.
- Bake the stuffed halves for about 15 minutes in a medium oven. 
- Remove the aubergines from the oven and break one or two eggs over each aubergine. Return the pan to the oven for another 5 minutes. 
- Serve hot.!!!
