Ingredients: 

8 eggs
8 medium sized potatoes
200 grams (7 oz) or 1 teacup butter
Salt
Pepper
 

Cooking Time: 
1 hour and 35 minutes
Cooking Directions: 

- Wash and wrap the potatoes in aluminum foil. 
- Place them in a small pan and hake in a medium oven for about an hour and a half. Remove the baked potatoes from the oven, unwrap them and when they are cold enough to handle, cut off their tops. 
- Scoop about half of the potatoes pulp out. Season the potatoes with salt and pep¬er.
Place one tablespoon butter on every holloed out potato and then break an egg into each one.
- Return the stuffed potatoes to the oven and cook for a further 5 minutes.
