2lbs small fish
1/2 cup flour
1/2 cup semolina
Oregano
Olive oil, for frying
Salt

Cooking Time: 
5-10 minutes
Cooking Directions: 

- Cut the heads off the fishes and throw away the entrails.

- Wash thoroughly, sprinkle with salt and oregano and leave to drain.

- Roll each fish in the flour and the semolina and heat plenty of olive oil in a large pan.

- Fry the fishes until golden.

- Serve hot.
