5 sole fish (Soleidae) of medium size
1 ½ teacups butter
2 eggs
The juice of one lemon
1 teacup flour

Cooking Directions: 

- Salt the edge of the tail and rub it well with you fingers, until you grip the skin. Steadily pull the skin back, until it comes off. Repeat this process on the other side. 
- With a scissor remove the fins and the head of the fish and place the sole in a pan. 
- Pour the lemon juice over the fish and season with salt and pepper. Drain the fish and coat them with flour. 
- Beat the eggs with a small amount of water and spread this mixture over the fish. Heat the butter in a frying pan, until it melts. 
Fry the fish for about 10 minutes over a medium fire. Serve either with mayonnaise or a sauce with herbs.
