2 teacups oil for frying
The juice of a lemon
- Wash and strain the whitebait well through a colander.
- Place a good amount of flour in a cake pan adding salt and pepper.
- Place the whitebait in the pan and shake well so that they become well covered with flour.
- Fry them in boiling oil for 3-4 minutes.
- Take out and drain them, before you serve.
- They should be eaten warm with a dash of lemon juice.
