2lbs zucchini, medium sized
1 cup flour
1 tablespoon baking powder
Half cup olive oil
- Cut both ends off the zucchini; scrape the skins lightly with a knife and wash thoroughly.
- Cut into slices either length-wise or cross-wise.
- In a bowl place the flour, baking powder, salt and water and mix to form a thin paste. Dip the zucchini into this and fry in hot oil on both sides.
- When golden, drain on kitchen paper and serve hot.
