Ingredients: 

2lbs green leafy vegetables (lettuce, spinach beet or Swiss chards)
Various herbs (dill, fennel, parsley, etc.)
2 cloves garlic
5 spring onions
Lamb ‘liver, lights, and intestines
Olive oil
Salt
Pepper
 

Cooking Time:

Cooking Directions: 

- Wash the vegetables very well and separate their leaves.
- Slice the onions into medium-sized pieces and chop the herbs and the garlic finely.
- Cut the liver and the lights into small pieces.
- Turn the intestines inside out with the help of a thin stick and wash them meticulously.
- Take a leaf from each type of vegetable and stuff them with pieces on onions and garlic, a piece of liver and lights and various herbs.
- Season with salt and pepper and wrap into a small bundle.
- Tie the bundle up with the intestines.
- Place the <<gardoumbes >> in a pan and dress them with a small amount of olive oil.
- Bake in a strong oven until all the ingredients are done.
